Banana Quinoa Pancakes

Recipe Yields: 2 servings
Ingredients
- 2 ripe bananas
- 1 egg
- 1 Tsp vanilla extract
- 1 cup cooked quinoa
- ¼ cup oats
- 1-2 Tbsp oat flour
- 1 Tsp baking powder
- ½ Tsp cinnamon
- Salt
- Butter, coconut oil or canola oil for griddle
Directions
- In a large mixing bowl, banana until smooth. Beat egg and add to banana. Stir in vanilla, cooked quinoa, oats, oat flour, baking powder, cinnamon and pinch of salt.
- Heat griddle pan to medium/high heat with coconut oil. Ladle about ½ cup of batter for each pancake.
- When bubbles start to appear on top, flip pancake. About 3-4 min each side.
- Top with maple syrup, yogurt, fruit or just eat plain!
