Tomato, Corn, & Mozzarella Salad

Tomato, Corn, & Mozzarella
Recipe Yield: 4-6 servings

Ingredients:

  • 3 cups chopped cherry tomatoes
  • 1 cup chopped mozzarella
  • 1/3 cup chopped basil
  • 1/2 cup fresh corn, shaved off the cob
  • 1 Tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp balsamic vinegar

Directions:

  1. Combine all ingredients in a large bowl. Toss to combine and serve at room temperature.
  2. Store in refrigerator in airtight container for 5-7 days.
