Healthy Chicken Salad

Healthy Chicken Salad
Recipe Yield: 4-6 servings

Ingredients:

  • 3 cups cooked, shredded chicken (lean meat best)
  • ½ cup greek yogurt (non-fat preferable)
  • 1 Tbsp mustard
  • 2 Tbsp mayo (low-fat preferable)
  • 1/3 cup chopped celery
  • ½ cup halved grapes
  • 1/3 cup toasted almonds, chopped
  • ½ small white or red onion, chopped (or scallions)

Directions:

  1. Combine all ingredients in a large bowl. Toss to combine and serve at room temperature.
  2. Store in refrigerator in airtight container for 5-7 days.
