As healthcare and business leaders in our region begin to grasp sustainability, they need to have a better understanding of what this means. We are faced with numerous choices and sometimes they aren't so black and white. As you can imagine, we all become increasingly challenged to be leaders in sustainable and eco-friendly delivery of our services.

Jamie Moore, Cura Hospitality Director of Sourcing and Sustainability will give a talk on "Consumer Confusion", a presentation about deciphering the terms of food manufacturers, as well as describe his responsibilities on sourcing fresh, healthy foods for NewYork-Presbyterian/Hudson Valley Hospital.

Attendees will also take a "conventional" vs. "organic" tasting challenge of pasteurized milk, the various taste characteristics of milk as well as the different levels of pasteurization.

Moore, who is also active with the Pennsylvania Association for Sustainable Agriculture (PASA), will focus on how Cura partners with local farms like Gillette Creamer in Ulster County who supply local ice cream; Rockland Bakery in Nanuet who supplies bread; and organic vegetables that are sourced from Continental Organics in New Windsor.

"We are happy to offer our knowledge and years of experience to our guests on local food sourcing, a commitment that Cura made over 13 years ago through FarmSource, recognized in the contract food service industry as one of the top local purchasing programs. Through FarmSource, Cura with its parent organization, Eat'n Park Hospitality Group, works with more than 200 local farmers and producers, and last year spent more than $23 million on local food purchases," says Moore.

Pursuing its Healthy Harvest initiative, Hudson Valley Hospital in 2013 announced its dining services partnership with Cura, a food service management company that manages dining services at more than 50 senior living communities and hospitals in the mid-Atlantic region.
