Banana Quinoa Pancakes

Recipe Yields: 2 servings

Ingredients

  •  2 ripe bananas
  •  1 egg
  •  1 Tsp vanilla extract
  •  1 cup cooked quinoa
  •  ¼ cup oats
  •  1-2 Tbsp oat flour
  •  1 Tsp baking powder
  •  ½ Tsp cinnamon
  •  Salt
  •  Butter, coconut oil or canola oil for griddle

Directions

  1.  In a large mixing bowl, banana until smooth. Beat egg and add to banana. Stir in vanilla, cooked quinoa, oats, oat flour, baking powder, cinnamon and pinch of salt.
  2.  Heat griddle pan to medium/high heat with coconut oil. Ladle about ½ cup of batter for each pancake.
  3.  When bubbles start to appear on top, flip pancake. About 3-4 min each side.
  4.  Top with maple syrup, yogurt, fruit or just eat plain!
